I think most everyone agrees on that point. I suppose part of the reason they ended where they did (not that I agree) was because the writers thought that Arthur finding out about Merlin's magic was really the climactic point of the story and that going beyond that would be too repetitious. Also, maybe some of the actors would have wanted to start moving on to other projects if it went on too much longer, as is the case with Downton Abbey.
