That's a tough one! Most of my Itunes music consists of movie soundtracks, but my current favorites are:
- the Lion King
- Harry Potter and the Deathly Hallows Pt. 2
- Lord of the Rings (extended soundtracks) & the Hobbit
- North and South (BBC miniserie)

And basically everything composed by Hans Zimmer (the Holiday, Pirates of the Caribbean 2 and 3, Gladiator, Lion King etc.). That man is a genius! :-D

^ Yep, I also like some of the Disney soundtracks. Although the songs can be funny and entertaining, the original score is worth a listen as well. Especially when it's composed by Alan Menken (Little Mermaid, Beauty and the Beast, Pocahontas). Although the Lion King will always remain my absolute favorite Disney score.

Oh yes the Hercules score! Awesome music, and some of my favorite Disney songs are sung in that movie :-D
And the Lion King has the perfect mix between light-hearted and dramatic at the right times. Especially "Kings of the Past".

It's not a movie, but an anime, but I absolutely love the soundtrack to Ginga Nagareboshi Gin. Some songs seriously make me cry from just hearing it.

I also love the soundtrack to Spirt: Stallion of the Cimarron. I think that Hans Zimmer did a great job with the score and I think Bryan Adams was the perfect choice to tell the story through Spirit's point of view, especially in the songs Here I am and I will always return.
