Correct--we know for sure that both Morgoth and Sauron lost their ability to change shape. Since I don't have my copy here, I can't look it up to see just why they couldn't, but I think it had something to do with the level of evil they committed. Actually, with Morgoth it was simply because he put too much power into Angbad, his dragos, etc, so he wasn't strong enough the shapeshift. Sauron lost his ability to shapeshift after the destruction of Numenor.

yeah I think Sauron couldn't change his shape anymore, because he committed too much evil. Haven't got my copy here either, so I'm not 100% sure, but that's what I believe it is.
