Well according to the book this quote isn't spoken by Grima but as this is a movie discussion this is my favorite Two Towers movie quote. When Grima says to Éowyn:

Oh, but you are alone. Who knows what you've spoken to the darkness in bitter watches of the night. When all your life seems to shrink, the walls of your bower closing in about you. A hutch to trammel some wild thing. So fair. So cold. Like a morning of pale spring still clinging to winter's chill.

I have a lot, but here are some of my faves...

Gimli(To Eomer): Give me your name Horsemaster, and I shall give you mine.
Eomer: *gets off horse and walks up to Gimli* I would cut off your head, Dwarf, if it stood but a little higher from the ground.
Legolas: *pulls out bow and aims arrow at Eomer's head* You would die before your stroke fell!

Gimli(to Legolas): You could have picked a better spot!

Theoden: Last I heard, Theoden, not Aragorn, was king of Rohan.

Treebeard: Well, that doesn't make sence to me, but you are very small.

Legolas: A red sun rises. Blood has been spilled this night.

I love the scenes in the Houses of Healing most, so my favourite quote is:
Éowyn: The city has fallen silent. There is no warmth left in the sun! It grows so cold!
Faramir: It's just the damp before the first spring rain! I do not fear this darkness will endure!

And also Arwen's song for Éowyn in the Houses:
