Nurr's Death:
Smothered with a pillow, note-leaving. I'm sure she offended poor Eliza at some point or another. It would have been easy to smother her, especially since Eliza is a good bit larger than most of the other guests. As for writing, if a headless man can talk I don't see why a horse can't read and write. It would only make sense.
Lydia & Evening's Death:
The spider could have been hidden in Eliza's mane, and the flowers were trampled a good bit, weren't they?
Kitty's Death:
Eliza was jealous of everyone eating the chocolate bars. "Many Meetings" could have referred to her meeting many people on her travels with Algie.
Fragile's Death:
Secretly, Eliza longs to be an astronaut. It's true. She wishes to travel among the stars and go on four-legged space-walks and eat freeze-dried ice cream on the moon. The red yarn is just to throw everyone off her path of destruction.
Kit's Death:
Eliza has to stay in the closet, as per Kit's house rules. It's awfully cramped in there and she wanted Kit to see how it felt like to be all alone in the dark. How was she supposed to know there was actually water in the well? Who uses wells for water these days?
As for the plane tickets, I've already mentioned her disposing of the evidence. It wouldn't do to have us know the names of the people bringing her to Puerto Rico where she has an off-shore bank account and a 401K set up in the event that they let her found a space program.
It's a conspiracy, I tell you!
