Hey! I've got an old(and I mean old) stuffed animal thats a winged unicorn, or pegicorn! (or unipeg... unipeg sounds indoresting... but I aggree it should be pegicorn!)
riddle:
Look in up, not down. Look for light, not darkness. Movement that is not wind nor cloud. Rarely seen, rarely heard. Gentle giant, yet wild with spirit...
(doesn't ryme... but who cares...)

My 'poem' isn't just a 'poem' it's a riddle about the mystical creature that I'm making! I'll give you some help... if it's up, not down, and isn't cloud or wind... it must be some kind of elemental! Next... think about what animal is sometimes called a gentle giant...

Hmmmm. Can I take a guess at your riddle? I would have to say it is either a flying elephant or a flying panda.
Horse mystical cretures are cool. I love my pegacorn.
