I thought of another one this morning.
I think it was Pintel who asked: I thought they used nine pieces of eight...
Gibbs: Well, the original plan was to use nine pieces of eight, but at the time of the first meeting of the Brethren all of them were dead broke.
Pintel: So why not change the name?
Gibbs: To what? Nine pieces of whatever we happen to have in our pockets at the time? Oh yes, that sounds very pirate-y! _________________

They are very effective!
From either Pintel or Ragetti, and they either whack Pintel or Ragetti over the head...
It's more like:
Pintel: We could still use them as clubs!
*Ragetti hits Pintel with his pistol*
Ragetti: They are effective...
It's best not to be mixing up Pintel and Ragetti... as the rabid Ragetti fans (Me and about five other people. ) might just come eat you. 
The one I've quoted most often so far is...

*Raises hand* I LOVE Ragetti! Funniest pirate ever. I dissolved with laughter when Barbossa's piece of eight turned out to be Ragetti's eye. It was SO funny.

Oh, they are awesome quotes.
It's not a quote, but I loved the part when Jack had multiple Jack and then,

There were two quotes from the movie that I haven't seen posted that I absolutely loved and I can't for the life of me remember what they were! I think one of them was from Beckett.
